I’m Kristina and paddle attachment chronicles my evolving love affair with baking of all kinds, but generally the kind that calls for sugar.

I work at night, like a little elf, not cobbling shoes, but cobblers and cookies and cakes and whatever sweet flour-y thing the heart desires or simply mentions in passing.  I can find almost any reason to bake.  You say you bit a nail while waiting in traffic today?  Let me bake you a cake.  You say it’s your birthday?  Well, let’s make it a big cake, with cookies in packages tied with coordinating ribbon.

Finally, while I don’t understand the science of baking, I’m always trying to improve and move outside the bounds of the recipe.  In many posts, I include “margin notes” that mimic the time worn handwritten notes in many a mom’s cookbooks.  I’d love it if you could share your baking expertise as well as your baking successes and flops with me.  Contact me anytime at paddleattachment@gmail.com.  I’d love to hear from you!

If truth be told, my reference to “love affair” is an understatement.  I’m obsessed with baking and all of its accoutrement.  That’s why my standing mixer is my prized possession, my precious.

    I am so glad that I have a Kitchen Aide the same color as yours. Maybe I can start making some magic too. HMMMM……I think I will start with chocolate cake for my friends’ birthdays tomorrow. This recipe produces a very moist, chocolatey cake. Here’s the recipe:
    DEEP DARK CHOCOLATE CAKE:
    1 3/4 cup flour 1 1/2 teaspoons baking powder
    2 cups sugar 1 teaspoon salt
    3/4 cup cocoa 2 eggs
    1 1/2 teaspoons baking soda 1 cup milk
    1/2 cup oil 2 teaspoons vanilla
    1 cup boiling hot water
    Oil and flour two 9″ tins and line with wax/parchment paper
    Sift dry ingredients into a bowl.
    In separate bowl, beat eggs. Add milk, oil and vanilla. Beat for 2 minutes.
    Add dry ingredients and beat until smooth. Slowly add boiling water beating between continually.
    Divide into prepared pans. Bake 35-40 minutes at 350 degrees.
    Check with a toothpick.
    Use mocha Icing and spread with grated semi-sweet chocolate.
